Overnight Delicious Oatmeal


Do you have a hard time prepping work-day breakfasts?  Between sleeping through the alarm, frantically grabbing a cup of coffee and quickly getting ready to rush out the door for the morning commute, I know for myself the first thing that gets forgotten IS breakfast, does this sound like you?

 
Well, here's an easy, delicious breakfast that is made overnight and the best thing is that when you wake up in the morning, your home smells like fresh baked pie or crisp, I don't know about you, but that will get me out of bed a lot faster than any alarm system!


OVERNIGHT DELICIOUS OATMEAL
 
Makes 4 - 6 portions (depending on your mason jar)
Prep Time: 10 minutes
Cooking Time: Overnight
 
Ingredients:
4 cups water
2 cups steel cut oats / 3 cups quick cooking oats
3 - 4 apples/pears or any fruit that works well with pie or crisp (if berries, use enough to fully layer the bottom of a crock-pot)
1/3 cup brown sugar / honey / maple syrup / agave syrup
2 tablespoons cinnamon
 
Layer the ingredients in the following order in your crockpot:
Fruit
Sprinkle sugar and cinnamon over the fruit
Oatmeal
Water
 
Set your crockpot to low and cook overnight
 
In the morning, wake up, smell the oatmeal, enjoy!

** sprinkle some walnuts, coconut flakes or berries for added flavor **
 
** cooked oatmeal stores excellent in the fridge for the full week, portion into individual mason jars and you are good to go **

 
How easy is that right?  This will beat any drive-through run, just ask S.
 
Health Benefits:  lowers cholesterol, helps prevent type 2 diabetes, helps the metabolism, a slow digesting meal (i.e. keeps you full longer), a complex carbohydrate and the list continues....
